Every time that we ate a meal with the pastors and communities in Zambia we were lucky enough to be fed a form of protein, normally this chicken stew but once made from sausage instead. Here is the recipe that I have found which comes closest to the meals we were made.
Ingredients:
one chopped onion
half a tin of chopped tomatoes
1lb of chicken cut into pieces
a few handfuls of spinach or kale
teaspoon of ground ginger
one clove of garlic crushed
one pint of chicken stock
1. Warm oil in the saucepan and then fry off the onion, garlic and ginger
2. add the chicken pieces and brown well
3. add the tomatoes and stock
4. simmer the stew until the chicken is cooked
5. stir in the spinach/kale and cook for a further five minutes
I bet you could make this with chicken, too.
