Recipe for Nshima - the staple dish of Zambia

Nshima Recipe
1 lb of corn meal
Large saucepan
Wooden spoon
Water

In the large pot mix 2 cups of cold water with two heaped tablespoons of the corn meal.   When this is mixed add hot water to the cover the mix in the pot. Cook this on high heat for 5 to 10 minutes, stirring constantly, until the mix is as thick as porridge. Reduce the heat and add in the rest of the corn meal slowly, keep stirring even when it gets very stiff.  After a further 10 minutes the Nshima will be ready; remove from the heat.
Zambians use their hands to eat Nshima; you pick up a small ball of nshima and then use it to pick up the Rep or Meat dish which you are eating with it.  I've tried eating it with a fork but it's not quite right.
